March is National Nutrition Month

Wait! Don't run the opposite direction! We are not about to hound you about your recent snack choices or guilt you into a new fad diet.

In contrast, we want to share the perspective of Brenda Langton, a talented chef who wishes the word 'diet' would just go away.

"There's no better time than right now to take charge of your health by cooking delicious foods that build up our immune systems, helping us feel happy and full of life," Langton says. "The word 'diet' needs to go away. I simply want to inform and inspire people to go home and cook good food - and reap the health and healing benefits of eating right!"

Langton has been described as the "patron saint of uncommon eating habits." For more than 30 years, she has been a vocal proponent of local, sustainable cooking and shopping. She currently runs the critically acclaimed Spoonriver Restaurant & Bar in Minneapolis and spearheads the popular Mill City Farmers Market, which specializes in vendors of local, sustainable, and organic products.

In conjunction with the Center for Spirituality & Healing at the University of Minnesota, Langton is offering a three-evening course called Healthy Eating/Healthy Living on March 30, April 6, and April 13, 2010. One of Langton's tips is to stock your pantry with simple ingredients that you can quickly turn into an appealing and healthy meal. For example, have pasta, pesto sauce, and walnuts on the shelves for a meal you can make in 10 minutes. Or stock couscous, chickpeas, raisins, and curry sauce for another 10-minute meal. Add fresh vegetables, such as tomatoes, zucchini, or shredded carrots to either meal for greater health benefits.
